Kevin Recently I graduated from my RN program & have worked in northern rural Canada providing acute care to marginalized populations for the past 2 years. My core interest is the physiological impact phytonutrients have on our body's ability to prevent disease. I have a keen interest on integrative & functional medicine. I have considered a Masters from Bastyr or B.Ed but would prefer to stay employed. Any ideas for a RN who loves to educate patients on nutrition or promote healthy lifestyles?

Ryan Paugh Do any of you Health Nuts out there drink Kombucha? I have one practically every day at work. My girlfriend buys them and tells me that they're good for me. The label says that it will restore balance and vitality into my life. I have no clue what that really means. I'm hoping someone can enlighten me. It's funny that I drink this stuff every day and I don't even know what it does. It's expensive too!

The benefits are, as Sean points out, mostly for your GI tract and immune system. However, I would not say that they are useless, here is a good article on the benefits of fermented foods from one of the few sites I read and trust when it comes to healthy eating. http://www.marksdailyapple.com/fermented-foods-health/ there is also a great primer on how to make your own Kombucha in the comment thread if your looking to save a few $$.

I haven't been drinking Kombucha for the last couple weeks because the brand that I buy got pulled from the shelves for some reason. Anybody know about this?

@Nathan -- There's a course over at Whole Food on University that teaches you how to make Kombucha. I've been thinking about taking it.

I didn't do any other day trips, but there are some temples in the area aren't included in the Angkor Wat complex so you could look into that. In Malaysia, Melaka and Pulau Tioman were both amazing. Also, the Cameron Highlands were highly recommended by everyone I met. Hope this information helps!

Ryan Paugh I usually try to make my lunches, but 2-3 times a week I can't. So I stockpile single serving meals (frozen burritos, noodle bowls, etc) from Trader Joe's. I buy this stuff from Trader Joe's because it looks and tastes a lot better than the crap at regular grocery stores, but is it any healthier? I'm no good at reading nutrition labels so let me know what you guys think!

Generally frozen dinners are high in sodium (500-600+) which can add up; if you're just eating them every so often you're fine. Go for easy, high protein snacks in between (hummus/veggies, apple/peanut butter) to off-set the frozen meals.

I'm in the "make all lunches over the weekend" camp, except for lunches that will come from dinner leftovers.

Without knowing what you normally eat or consider "healthy," I wouldn't be able to give great advice, since none of the "heat and serve" meals are healthy by my standards. (Not trying to condescend — I've just become fairly health-conscious over time.)

If you can't (for reasons unknown) make lunch 2-3 days per week ... that's between half and most of the time. If it's important to you to eat a healthy lunch, perhaps checking out why you can't make lunch regularly (and making adjustments) will help more than reading labels.

Ryan Paugh I rarely eat breakfast. I'm just not hungry first thing in the morning. Not too mention, as soon as I wake up I'm already running out the door. I'm realizing that this habit poorly affects my brain power at work. Any suggestions for what I can do?

I agree with Erin; you can take the ferry overnight if you want from Athens as to not waste a day. When you get to the islands, you can travel between islands by high speed ferry. You can buy an island package.. or just play it by ear. I would recommend Santorini for sure.. and Ios if you would like a more foreign experience. There aren't as many Americans on Ios compared to Mykonos.

Luke J I have an online business and can live/work anywhere with a good internet connection. Would love to do 1-3 month working holidays. The only thing holding me back is solo travel. Have been on holidays by myself before and am independent but is nice to have someone around to grab a meal with etc. I would be staying in nice serviced apartments rather than hostels. Would be great to find others in the same situation as me, who are potentially looking for a travel companion on a working holiday.

JESS Kalinowsky I note that people have been burned with "DIY" online travel reservations. How much money is a person willing to spend to save the money they would use getting the advice of professional travel consultants? Is it worth hundreds, thousands, to risk buying on the net? Personally I think not. When I spend my money I want professional help! I would not dream of traveling without full insurance coverage! Traveling internationally is not simple, it requires professionals to make travel arrangements.
